I've got multiple characters on both servers, in the meantime I keep seeing people already at lvl 15-20. I just wanted to try all classes and really get a feel for what I like. Should I focus on leveling one guy or does racing to 50 really matter?

this game is not multiple character friendly, you will have to do all the quests all over, and none of your achievements are account wide so theres really no point in having more than one character, pick a good base class and use any variety of weapon skills you want, and reset anytime you want

Level cap is actually 63. There isn't even a level 50. You go straight from 49 to VR1.

One guy I deleted was hard for me I swear he looked just like the Undertaker from WWE!!

Well, don't rush to 50 for the PvP either. I think some of the best PvP currently is in the non-veteran 1-49 campaign. The battle leveling system puts most players on a fairly equal footing. And whilst there's some powerful twinks running around, it's not overrun by overpowered, overgeared VR14s like the veteran campaigns seem to be. This is on the PC though, I can't speak for console.
