This is a far cry from the assertion that not having an AH would create an egalitarian system.
So now my 3 trading guilds have no trader for a whole week, making less money, making it harder to bid, and inevitably losing members. Effectively these guilds now have no access to the open market.
The elite guilds control the market.
We just want to trade, buy & sell and not have to put so much effort into bidding, recruiting etc.
If we are not to have an AH the current system needs some serious reworking.

Apparently my own trading guild is spending in the 600k+ range per week for their kiosk. I've never had more than 15k gold on any of my characters, so the amounts being thrown around are mind boggling.

I applaud the effort. I think it's a fantastic resource, but we need in game tools for these sort of things. ZoS has forgotten about all the bells and whistles that can help sell a game. The core game mechanics are just fine. We need all the little shinies and polish that will move this game from good mechanics to "Wow! I have to play this game forever!"
Once they are done with their champion system changes, I really hope they forget about systems changes for a while and work on polishing up a game that really should have higher sub numbers than it currently does. Fixing the mess that is kiosk bidding would be a great step.
The least they could do is add a trade section to this, their official forum.
The ones that don't want a global AH are the guilds that have these trading spots locked down. They are afraid of competition and the fact that players might buy from other players at a lower price than pay stupid inflated amounts for certain items.

To Sum Up:
1. Kiosks represent more than one Guild Store
2. Wandering Merchants have random access to a guild store inventory for selling, in addition to the normal vendoring/repair that they do
3. More Kiosks in the locations there are now.
4. Trade Fairs with more kiosks but no more kiosks in the hinterlands
5. Trade Fairs with more kiosks and keep the kiosks in the hinterlands
6. Lottery System where kiosks are assigned randomly to a pool of applicants, with or without a cool down timer on getting back into the pool
ZOS agrees with you, that's why if you check your map there is a special icon indicating where the guild traders are located.
