My top two are the only two:
    Skyshard Map
    Lorebook Map

Both may or may not be turned off depending on the character/mood.

I'm surprised people aren't listing Personal Assistant. Makes bank visits very short and inventory management easier. However, like I said above I can't live without any of my 48 addons.

I literally WILL NOT PLAY the game without Advanced Filters and LootDrop. There's many others that I would greatly miss, but those are the two "must-have" addons.

I use about 12 - 15 addons. The 3 I find the most useful are Skyshards, Research Assistant and HarvestMap.

All 48 because the vanilla UI is garbage. (why can't I put images side by side?)

Wow! That is a lot of add-ons!

About the side by side images. Why haven't people figured out that most people have wide screen monitors. Instead use these silly forums formats using 1/3 of the screen right down the middle.

Here are 3 of my favorite add-ons that makes FTC a little less attractive beyond a few minor features...

Combat Cloud - Shows damage/heal numbers, CC effects, and warnings, all color coded based on damage type (and 100% customizable).

Azurah - If you love the basic ESO UI but wish you could move things around, have it show resource numbers, what class your opponent is, color code NPCs by aggression type, and just plain show more information while not destroying the foundation, Azurah is a dream come true. This is easily my favorite add-on as it is low clutter, super useful, and allows me to still stick with the traditional ESO UI for most things (also you can make your XP bar always visible which is super awesome).

    Srendaar
    - Creates a moveable UI that is based off the traditional ESO UI for keeping track of buffs, debuffs, auras, and more. It is also super customizable and provides a ton of display options.

Using these three (with a couple features of FTC for Ultimate tracking and damage statistics), I get a really clean and attractive UI that is way more informative and detailed than FTC.

I also really love this small add-on...

Inventory Item Borders - Puts colored rarity borders around your currently equipped items. Also allows you to see their remaining durability without highlighting your items, and color them red when they are getting close to breaking which is super nice.

I use a number of others, but these ones are my staples.
