Vampires don't transform, but it would be interesting. Turn in vampire's lors or something like this. About wild animals - I can't imagine this. Why animals should transform? Or you mean players transform in fish, bird, bear and so on?
I've always found things like 'werebadger', 'werepanther' and 'weresquirrel' to be kind of silly. I'd like to keep it werewolf.

Well, werebears and wereboars have been in previous Elder Scrolls games. (Skyrim and Daggerfall respectively.) Wereboars were supposed to be playable, but apparently there was a bug so if the player was infected by one they'd turn into a werewolf. Weresharks have been mentioned occasionally in the series. And, of course, there are Werebats in Greenshade, so they've already started sneaking into the game to mess with you.
Thing is, Elder Scrolls is kinda a goofy setting. It's at it's best when it embraces that.

Oh absolutely, there's been others exist in the world. It's just my preference that they aren't playable - similar to my preference that lilmothiit don't become playable.

You're fighting a dolmen, and then one of the players starts spazing out, grunting, contorting... and shrinking!? They shrink down to a tiny crab and get eaten by a daedroth who celebrates by setting everyone on fire.
