Does the game get harder? Are there instanced dungeons at some point?
I think that the problem is one of balance. The easiest mobs are too easy and the hardest bosses are too hard. You don't want everything the same difficulty. The game, like all, needs to be a roller coaster. The peaks and drops need to be refined though.
I have a lvl 45 toon that can't play anymore. I refuse to PvP nor do I join groups or raids. I can do the easy stuff in my sleep. I can no longer defeat any of my remaining quests or bosses. The game for me is over as ZOS decided to abandon horizontal PvE content. I have alts in every faction so I am able to play them however. It does suck that my main character that I have invested so much in is dead.
Other than balancing mob difficulty the ultimate answer that could appease all layers would be a difficulty slider. Sweetroll/Normal/Dragon modes would give the most players the ability to enjoy the game and to continue their subs.

Id strongly suggest re-evaluating your skill rotation, update your equipment, seek strategies and watch vids detailing the areas of struggle. At this point there should be no road blocks to V10. Seek tips from the community regarding skill rotation for your class/build that were useful for these encounters. Also, swapping to staffs isn't a requirement (if you aren't currently using them), so don't take those suggestions to heart.

No way. I do this for play, not work. I have no interest in putting my limited time into non fun things. It is a beautiful game and I have had fun for the most part up until now. If I can't play I won't pay however. Seems to me that making the game approachable for the most people makes the most financial sense. Having 2 or 3 difficulty modes and having new content for the PvE solo players would do just that. This game, like life, doesn't have to be either/or. This game, unlike life, can be an escape that doesn't ultimately involve pain and death.
I'd say hard for any reason!, not only "difficult level", IF you're just starting the game you can say that's easy, and get's "meh/a lil hard" till level 50 (of course, playing as DK game gets easy, sorry guys but it's true).
Post-50 zones, nowadays are "meh", and gets a lil hard, including some Solo, Group Public dungeons, Mini-Bosses and etc.
Crag/Trials and VET Dungeons, get "meh" to hard, depends the group and people you're playing.
PVP, depends about build and well-balanced classes, nowadays DKs has better options. (sorry guys but it's true, no matter what trolls says).
We can't think the game is easy just because you're a "pro" MMO player, but it's all about.
We have lot's of difficult including bugs, balances class, lag's and etc...
Overall game is "Hard".

There have been plenty of times where I thought to myself, "If I wasn't a Templar with a resto staff and wasn't able to heal myself, I would have been dead 30 seconds ago. I don't know how I'd do this without heals."
Some builds make encounters easier than others, but as a whole the game is challenging and engaging IMO.
The game is hard enough for me. Some dungeons (at or near character level) range in difficulty from not that much to whoa, this is a dungeon for my level? So, it is a nice mix. This is all Solo.
Once grouped, most dungeons are not that difficult to finish.
Strangely enough, when I am in a dungeon that is leveled below me so I don't build Ultimate, then those dungeons are harder when it comes to Boss time than the Bosses are with dungeons at my level where I can use my Ultimates.
