There is the advantage of running for longer with more stamina put in your horse, but I think Evergnar is right....I would go straight speed. I'm building a speed only for Cyrodill myself.

Only if you're hoping you an dismount-proof horse, if you just want a horse that can run for long distances, then you'll be fine.
But in the case of your particular expectations, yes, disappointment seems to be on the horizon.

Really, I haven't done the stamina on the horses, but I thought it would make the bar bigger. This is stupid, we have a seperate speed stat, the only point for stamina would be for running longer.
Sometimes I wonder if the Devs understand the point of stats.

That's right. Stamina only determines whether you can start the sprint. Stamina is not needed to maintain the sprint.
People have debated as to whether this was intended by the devs or not. Those who think that it was not intended argue that horse stamina should work like character stamina in that your character's sprinting stops when you're out of stamina. Others argue that horse stamina is a different design altogether that combines characteristics of HP and stamina.
