BST = British Summer Time (This is when there's an hour difference between UTC)
UTC = Coordinated Universal Time (this is where all the clocks set themselves upon)
GMT = Greenwich Mean Time (UTC's predecessor, yet still used)
ZULU = UTC
CET/CST = Central European Time/and summer equivalent (ZOS gives these times on the French and German announcements, because those countries are in that timezone)
EST/EDT = Eastern Standard Time/and summer equivalent (this is where all servers are located currently)

They have an American time because the company is in America. Your server is in America.
