Yeah, as the link given above explains it was part of Starcraft wherein that race/faction won by having tons of units that overwhelmed the opposition. It has come to refer to any large force in PvP (Player vs. Player), in this case a large force of players.
So if you join the Alliance War after reaching level 10 by traveling to Cyrodiil (hit your L key to get started) and you see a large swarm of enemy players moving like locusts toward you, that is a zerg. You can tell they are enemy players because they have a little colored plate overhead (red = Ebonheart Pact, blue = Daggerfall Covenant, yellow = Aldmeri Dominion). Your fellow alliance players won't have such a plate.
Zergs are known for being an example of group social dynamics, reacting as a mass rather than as individuals. Once a few people head one way the rest of the zerg tends to follow. If a zerg has a leader (someone shouting our directions) it can be guided, but if not it is kind of mindless and is just drawn to the closest target (group of enemy players, an enemy controlled keep or resource, etc). If no targets are close at hand and there is no leader they tend to disperse.

No it's more like battle field conditions in prehistoric warfare. Warfare has been more organized than anything that resembles this mess for more than two thousand years. I am not saying that zerg PVP is not good. I like it a lot but it's nothing but a fun chaotic mess.

I wasn't just thinking of Medieval, and honestly, it depends on circumstances. There have been battle plans, military formations, and rules of engagement for millenia, but, under the right conditions (unexpectedly coming across an enemy position/being ambushed, loss of field leaders/disruption of communication, massive numbers of troops fighting overly long in disruptive conditions such as night or fog, fighting with poorly trained troops, etc) things could easily descend into an unholy scrum of bloody terror.
I only have one question: WHAT THE HECK IS ZERGING?
