Interface Settings Keep Resetting!

Hello everyone! I am currently playing ESO and having a ton of fun. I really appreciate the minimalistic, Elder Scrolls-like UI, so with that in mind, I decided to hide the floating health bars, the hot bar, and the chat box. However, it seems like every time I restart my game's client, these Interface settings are reverted to default, so always when I open the game, I have to make these changes. It is very annoying having to do so.
With that in mind, does anyone know of a solution to this issue? I have reported this via /bug to ZeniMax Online a few times already but nothing has been said or changed.
