These are companies that build them with gaming in mind. They have the horsepower and cooling you'll need. That being said, if you AREN'T specifically looking to do ONLY GAMING, then any good brand laptop fully spec'd out should run a game like ESO at medium-high settings no problem.

I like having a laptop, though I don't travel, because I don't like only sitting in one room in the house and I teach, so have an office at school where students usually don't show up to office hours so I can play games on my laptop instead

Just depends on how picky/*** you are about fps and what your game looks like graphically. If your happy with low fps and low settings then yeah a crappy laptop will run it...
I run ESO on high with no problem on my 15" Macbook Pro retina (late 2013) full optioned out. I used to be against laptops for several years until recently when I started traveling a lot. When I am gone for days, sometimes weeks at a time, lugging around a desktop isn't very convenient so I decided to go the laptop route.
