I find this hard to believe. You're telling me not once has their flapping every blocked your view? Do you just never talk to npcs with it summoned?
I ended up just deleting my sorc as I used this as my heal skill, and I just had enough of being irritated by it.
I've been playing pet sorc since I started playing and to be honest, I don't remember her blocking my view, if it did once or twice, it never bothered me. About some things, like changing my outfit or talking with NPCs, I rly don't remember if I had blocked view. (It's more the crazies running around with resto staff and abilities that get on my nerves (when I'm at the overland outfit station))
And I don't play from the first person view, because I have no reason to play this game that way, in dungeons and trials I need an overview, not to look at my hands in a limited view.
I'm more bothered by Maw or Colosus or Atros when I'm tanking a boss and someone throws Atros at my head lol
But still as I said, I understand and agree that Twilight need some changes.
Or maybe it would be enough that when one uses crown store / outfit station / armory / talk with NPC the game doesn't show anything distracting around. Pets, players and NPCs disappear in certain situations when they are too close around your toon"in the view" of the camera.
We just have totally different experiences then. I play in 3rd person for the most part, and a lot of times it's fine. But I quest a lot, and I like getting very immersed in the stories and voice acting. Every conversation puts you into first person with the NPC, and within my first few conversations I had after getting that pet I noticed her wings flapping across the NPC. Sometimes I would run in a big circle so she was more behind me before convos, but that got annoying too and just added tedium to questing. Unsummoning every conversation is also annoying.
Pets only occasionally got in my way at stations, and I don't really spend that much time at them to get annoyed. I think people stitting on their mounts in some areas was more an issue for me than pets. But it still happened here and there.

I think when it comes to talking to NPCs it's a problem of the camera setup itself. When you use the menu/inventory, pets, companions and players disappear if they are close enough to your character. Anything further away can do a "photobomb".
So why doesn't ESO have a parameter to make talking to NPC's something similar and thus all objects in the vicinity should disappear.
