My main's horse is named Chocopuff. My alt's horse is named King of Trolls (Discworld reference to the default horse name, Diamond).
Every time someone swears, it gets replaced with three asterisks. There's only one three-letter swear word that I know of. I read that in the place of every set of three asterisks. It makes for some amusing sentences.
"Favored Horse Number One" the "one" is pronounced "un" (so he can have a unique name). Favored Horse Number One is a pack horse and now has bags that hold 22 items.
"Mr Fast" (actually a mare) who is 27% faster than something, though not sure what she is faster
"Silver Schleper" he has a Stamina of 20%+ and I still have not figured out if Stamina is useful other than preventing mudcrabs from unhorsing me. Silver Schleper may not be worth the food, but since I was was raising Mr Fast and Favored Horse Number One (i some times use his nickname to save time, which is Favored Horse One (pronounced "un")) I fIgured i would raise one with stamina.

I'm about as creative as a toothbrush, so the names of the horses my characters have leave a lot to be desired. Nonetheless, here they are:
Imperial horse for Imperial character: Renatus
Imperial horse for Argonian character: Carries-the-Burden
I found the naming feature by accident, but that I can change the names of them is a nice little feature. It's great to see that other players are exercising their creativity by naming their horses as well!
