Why would I want to get a large bounty? Also I doubt a neutral npc gives more exp than DSA. You lose coin and depending on the companion, rapport, taking this option. you can absolutely make money with that too, that's the main reason i started this. 100 - 200k in gold an hour is no joke but you need a highly specialised and full geared character for the job.
And no, i'm not talking about simply getting any sets and killing random NPC's anywhere but having a route that fits your kill speed, the correct sets, passives, CP and more. I put endless hours in perfecting this and i have five characters doing "The Thing" with a combined bounty of way over 300 million gold. That's making me some kind of expert i guess and if you're on PC EU you can join me for some rounds to see what it's all about.
I finally got Ember leveled and am now going back and leveling Isobel. Originally, I started leveling Isobel, and then switched to Ember after I got tired of being lectured by Isobel for taking things out of chests left out in the middle of nowhere. Ember is awesome! She is by far my favorite companion. And my wife even misses her. However, I did figure out a great way to power level a companion. Get a really good build and then take them through Dragon Star Arena. With a good XP scroll you can sometimes 4k xp per round of enemies, and you can that several times per level.
I really want to get Isobel leveled so I can get Ember back.
I am tempted to not level Isobel, but I have all the other companions maxed out.
After I got Ember, there was no going back. She is special in so many ways, so I don't plan to ever replace her. Voice work is top notch imo.
I just cart them around with an XP scroll, but if I need to farm levels, I do Spellscar. I need to eventually force myself to max level them all, I got Bastian done first and then finished up Ember during the High Isle event, leveled Mirri up a little bit but never touched Isobel yet. Personally, Bastian is my favorite and I have no real drive to max out the others, since I am happy with him (none of the others really strike a chord with me) . I use Auto Banish Pets to dismiss him when I do things he doesn't like.

You are talking about stealing now, and no, that's not impressive that you make coin stealing. I am well aware of stealing, it's not something you mentioned until now. However, there's a reason you said to do it on characters you don't care about. It's because, it does, in fact, result in a large bounty that loses you money. You can make the same money just stealing from neutral NPCS and using the blade of woe on them, but the experience gain is negligible. It is not an efficient way to level up a companion and rapport. We all know the drunkards drop the Khajiit Skooma Bubbler plan and other loot.
Someone with just one character or two characters they actually care about are going to do a lot worse taking this method because the bounty will outweigh the coin drop in most cases where you did not pickpocket before hand and just attacked them with your weapon, as you originally put it.
The exp gain for the companion is also garbage.
