I feel the same,while I like so many different mounts and collected them at some point,nowadays I pass on most of them (Sunken Trove and Celestial crates I am looking at you...)

My ice-themed sorc uses the Indrik, and everyone else has used the plain black White Mane horse since I bought it in 2016.

I've placed a couple of the others as decorations in houses.

Don't really have much use for the "fancy" mounts.

That "level up reward horse" is called Sorrel horse, there are a few others to buy from the stables as well. All of those are normal horses with just a different texture. They look quite nice together in our own stable.

Whatever ZOS artist is doing horses should be retained in kindergarten for another year. While characterizations of most animals are exceptional, ESO horse are H O R R I B L E and probably the worst in any game. Physiologically, they would be nonfunctional, the way they're broken down in their hindquarters -- and the stove-pipe legs on the originals was seriously based on a rhinoceros model.

Horses are the prime reason I own so few mounts and refuse to pay for any of them.

The question is nor right nor wrong,it is what it is, just a different question.
I get your point, most people own lots of mounts but only use specific ones for certain characters.
In my case for example I like to adapt the mount to the outfit with each char, therefor I do change my mounts sometimes but I never used any bears, very rarely I use a camel,horses or a guar but I own quiet a few of each,specially horses.
My picks always go for elks,senches and wolfs.

I think I might be one of the only people who does not use any of my mounts...ever. With all the speed-related passives going I feel like I run fast enough.

Of course, I don't PVP, so I'm sure I would mount up if I did.

With 16 characters, I’ve tried to give each their own unique mount, but the give-away crates in the past have added a few unused ones as well. None of the used ones have effects, or are mechanical.

Agree, the horses are so horribly stiff and busted.
