I like a lot the ES lore and I have several favorite books but I decided to share one that made me laugh a lot the 1st time I read it:

Ode to Oinkers
"Pink Piggy Friends!
Grunt and squeal and dig.
Do your best today.
For tomorrow you will be in my tummy.

Why do you taste so good, Piggy Friends?
How does Mother's cookpot transform you?

Among my favourite TES books is the unofficial cycle of stories told from the perspective of arguing tavern patrons: Hallgerd, Xiomara and Garaz. I love their bickering and I had a lot of similar vibe rp with my guildmates back in the day.

Chance's Folly also always stuck in my mind especially since you could actually find the stone mentioned in the book holding the door in the actual Heran Ancestral Tomb in TESIII. Brilliant!

Dance in Fire was a funny little saga, similar in vibe to the Hobbit.

Those came to me from the top of my head. I love TES books, it's a great way to build lore and the stories are often really entertaining.

There are many. Funny ones, sad ones, interesting ones that pleases my lore nerdiness etc.

Although, one book (technically it isn't a book) I found quite enjoyable finding and wished I had all pages of, is the play "Elsweyr My Love". Found in Southern Elsweyr. Also wish we could see this play in full somewhere...
