It is a product where part of the experience is going to be downtime and setbacks. This has been the standard of MMO's since the beginning of time. Sometimes the gym that you pay membership to is closed as well.
Log off, go do something else during the downtime, and come back later or tomorrow when things are smoothed out.
You say it smells of white knighting, but I say that throwing a temper tantrum everytime the server has an issue reeks of spoiled entitlement.

While I see and understand your point, gamers complain about literally everything.
ZOS could say "Here's 10,000 crowns for the server trouble" and these same people would find something to complain about.
ZOS could magically fix the server issues, without the AOE changes that have been made, and make the smoothest running MMO experience of all time, and gamers would still complain.
How do I know? Because I have been around MMO's since EverQuest, and it is the same story literally everytime. Doesn't matter if it's ZOS, BethSoft, SOE, Blizzard, NCSoft, or whatever MMO dev in question, the same issues always happen because they are a part of the nature of MMO gaming, and entitled gamers expect pure uninterrupted service 100% of the time and throw the same temper tantrums everytime it doesn't work out that way.
