Its implied that while some Nords like Balgruuf made pilgrimages to High Hrothgar, Ulfric was supposed to become a Greybeard, i.e. a secluded monk meditating on the Thu'um and worshipping Kyne for the rest of his life up on the mountain like the others. That's not a lifestyle that a lot of people want or are well-suited to, and even Ulfric decides he can't go through with it because that would mean ignoring the Great War.
Also, by the time of Skyrim, all the other groups who knew how to Shout seem to have died out. For example, there's no Imperial College of the Voice in Markarth anymore.
I personally find it amusing that no one cares about the Sorcs running around with Daedra, surely this should raise some eyebrows of law enforcers?

Not neccessarilly. Those daedra are probably seen as something like magical trained animals. Necromancy is defiling the dead, which is taboo in many cultures for all kinds of reasons. Not to mention that the rather unpleasant odor wafting from anyone that works with zombies is probably a tad more pungent that what the demon monkeys produce.

Yeah and that was disappointing to me, would have been nice if we met young Nords training up there but can't change it now, well you can but only by Modding.
