If I link my current account to Steam, can I only access the game via Steam or will I be able to choose between Steam and Default Launcher?

Linking your game to Steam does nothing for this game. You can't even see your Achievements in Steam. I don't know if linking only allows Steam Logins, but I will say that Steam does frequently have issues when trying to log to this game through the Steam portal.
Enjoy the game, life is what you really want to be worried about.

Well the dilema is I got plenty of steam gift cards lying around from my birthday and dont know what to spend it on, so I thought ill link my account to steam and treat myself with some extra eso+ / buy elsweyr with those gift cards, but if the drawback is that I can only logon via Steam after that, its definitly not worth it.

I'm not a steam user myself. I do know that linked steam accounts can still be played from the eso64.exe file the eso launcher uses to play the game if you wish. Steam purchased versions of the game don't have that game file or some others also.

Linked accounts are the same as non linked accounts as far as ZOS files are concerned however your Launcher window will not have any login credentials for you to fill in. All you will see is the Launcher and no Name or PW boxes. It will use your Steam credentials to login to ESO.

I highly suggest you NOT go the Steam route. Lot of issues with this in the past, especially on the EU server.

Here is a link for many, and I do mean many threads about logging in through Steam: https://forums.elderscrollsonline.com/en/search?Search=steam+login

You can also go to Steam and search for ESO login issues and find just about as many threads there as well.
