I'll defer to those who use it with regard to what your guild can see. The obvious privacy concern is that you are the product, not discord; they're farming all the data they can about you and selling it, just like all the other "free" internet services.
You need to decide for yourself if that's a price you're willing to pay for the obvious benefits it provides (personally I prefer to use jabber, TS and a forum).

Most trials and raids were probably not so mechanics intensive as the ones we see in ESO, particularly the newer ones. You dont need coms were bosses are just meatbags you beat on for a few minutes before they die.
Try typing out instructions for VAS or VCR with no coms. You'll be typing for half an hour or more before you're even ready to start.
Voice coms makes it so much easier and faster to explain and coordinate. Plus the calls that need to be made during the fight that typing out could mean you die or the group wipes.

Probably the opposite actually, both in respect of the complexity and also given that raiders in the old days couldn't spend a couple of weeks on Youtube seeing how everyone else had done the raid before prepping their fellow raiders on what to do.

How many of those raids were against bosses that required the team follow complex mechanics where different team members have to split up and do different things in different room/levels and if someone dies, you have to communicate that because you cant see that they died and a backup has to replace them or the group wipes? Or were those bosses just meatbags your whole group beat on for 10-20 minutes til they were dead like so many bosses usually have been in the past?
Some of these vet trial bosses are very unforgiving and have pretty complex mechanics that require good coordination. You don't have time to type out "Joe died, backup one go" in the middle of a fight.
It's certainly with your preview to not want to be on voice coms but don't expect trial leads to want to accomodate you and type out pages of instructions and try to type in fight calls that people need to know to avoid a wipe.

So you must really hate text chat since it is far more immersive to hear people around you talking than to read them typing. And, obviously, reading requires you to look away from the action. I agree with you that text chat is really annoying.
