I have to say Oblivion. It was the first TES game I played, and I played it over and over and over. And over. On PC. Never modded, because reasons, though I did use console-commands to get a few things... after my initial playthrough.
Then I tried Morrowind and hated it. (If I'd done it in reverse order, I'm sure I'd have loved it.)
Skyrim - don't get me wrong, I played that game to death too, but the grey palette was dull. Like that of Fallout 3 (which I decided to try because I'd loved Oblivion so much). The Skyrim VR version is amazing, but only because it's 3D... the graphics are old and outdated.
ESO - I've put the most time out of any game I've ever played into ESO, but various changes, yada yada yada... atm I'm not really playing it. Elswyr might suck me back in.
Elder Scrolls Blades - I tried this at PAXAus and it was pretty cool. Really looking forward to its release.

Morrowind is one of my favorites, if not because it got me interested in modifying my Bethesda games for the first time. Funny thing is the most memorable "mod" I made was a slave shack on a plantation at the bottom of the ocean.
Why I chose Oblivion as my favorite was because it was the first Elder Scrolls game I really got into. I tried to get into Morrowind, but I found all I did was go into caves and Dwarven ruins for plunder instead of paying attention to the story which was the real meat and potatoes of the game.
With the addition of voice acting in Oblivion I found the stories much easier to follow, and my young mind at the time could work with it easier. I'm sure if I were to really get into Morrowind these days I would have a considerably easier time of it, if only I wasn't so addicted to plundering ruins.
Easily Morrowind for me, which I spent a huge amount of time playing.
I own but still haven't finished Oblivion or Skyrim. Also haven't finished ESO.
In the gameplay department, if ESO didn't have classes or if they had delivered spellcrafting as originally advertised oh so long ago, it might be a serious contender. As it is, it may never be something I'll more than keep a toe in.
In the design and visuals department, making the Telvanni towers look so horrifically ugly and also putting them in the crown store killed any chance ESO had of making my love of Morrowind blossom in ESO. I super love the idea of living in a living house like that.
On a similar note I love the concept art for Bosmer pods but don't love their implementation - with dead animal parts everywhere. The house designers obviously don't watch renovation shows. Polarising elements like that should never be part of the structural (i.e. unchangeable) design.
I've liked all the ones I've played, but you just can't beat the breadth of experiences available in TESO. We're not focusing on a single province at a time, and as such we get a much better spread of insight into the multitude of cultures around Tamriel. Now, some aspects of the gameplay which are necessary for an MMO experience detract a bit from the immersive aspects, but you get some of that (in different types and concentrations) in the single-player games, too, so no biggie.

Daggerfall had sooo much more then Morrowind, but Morrowind felt sooo good when I played it.
So I am leaning more towards Morrowind but it's hard to choose between these two.
I'll vote Morrowind, but I am torn between the two.

Morrowind wins for it's unique atmosphere and mysterious story.
Gamplaywise it's Skyrim.
But I must admit that ESO had the best realised story of all. I really liked it's finale, still Morrowind wins by being single player experience.

Hasn't been another game come close to the open world exploration, open character build/progression, storyline, skills, spells, weapons, fame, infamy, and choices that mattered in the true Morrowind.
If you can look past the dated graphics, nothing else comes remotely close, and likely never will. It was the RPG that RPG's are still judged upon to this day. No one's ever matched it, not even Bethesda themselves.
One boat, one map, and one giant fog-of-war covered world to explore, any way you wanted to.
EDIT: Oblivion gets notable mention, because the in game Physics and dungeon traps (especially the room-sized Ayleid ones) were phenomenal.

And with Daggerfall Unity really gathering speed and features I will be visiting it again soon while I wait for the only thing that will keep me playing ESO, the necromancer.
Was my first TES game, with many fond memories. Plus modding wise, the Curse of Hircine mod has the best, IMO, werewolf system and model in terms of design. The world also feels nice, colorful, yet different depending on where you go. I love the old mines, ruins, abandoned keeps, caves and such, then let's not forget the shivering isles, plus first person horse riding~
It's not as immersive as the single player titles but it's given me a chance to explore so much of Tamriel and learn so much lore I never knew before.
Also the fact it's ongoing, new content and adventures on a regular basis.

I think it is pretty hard to compare a single and multi-player game.
I have much, much more playtime in ESO than in oblivion, but that's because playing with others is more fun to me.
But that doesn't mean I like ESO more.
I'd put it like this : ESO is my favorite game in general.
Oblivion is my favorite Elder scrolls game

Oblivion I really enjoyed Morrowind too and I much preferred the questing and interactions in the world, having to find people and places yourself, the dialogue system unlocking speech options to ask people things making it feel more natural to start quests and gather info without instantly knowing everything(like in Oblivion, Skyrim, Online with its big arrow go here), sadly morrowind comes second because I hated and always will dungeons and dragons style dice roll combat, there is NOTHING more aggravating dying to something because you kept missing your attacks.

too hard a choice for me. started with morrowind which was unlike anything I had seen or played at the time( mostly played stuff like streets of rage on sega and mortal kombat). oblivion was amazing as well, always played a nord so I found myself living in bruma. then skyrim came out and I finally got to see the homeland, the mountains, the snow, all of it completely fantastic. and then the game killed my ps3(eventually got it on ps4). ESO is great, I love the look of the characters and the size of everything, but all the maps and everything seem watered down and candy coated and I absolutely hate having to use anything remotly magical. even all the stam morphs are magikesc sparkles. still like it, but the biggest reason I keep playing is because the grind is addictive and pvp.

I really like Morrowind more; it's hands down my favourite game, ever. But since it's also the only Elder Scrolls game I've actually completed, my opinion isn't based on enough data to be valid. (Oblivion bored the snot outta me and while I finished the MQ, I never got through any of the DLC or most of the side quests. And I'll probably never play Skyrim. Even the mod that turns all the dragons into Thomas the Tank Engine isn't incentive enough.)
DA:O is great though, and I'll always have a soft spot for it, so much so that my ESO main is just a Tamrielic version of one of my Wardens. I've got thousands of hours into playing and modding that game... luckily the Bioware 'fandom' is intolerable, or I might get the urge to fight the Blight again. :-/
For many, the choice will automatically be the first game in the series that they played. There will forever be an emotional attachment to that story and setting because it laid the groundwork for every other interaction you will have with that series.
Coming out of the Imperial Sewers for the first time was such a profound experience for me that I can still remember it clearly.
My memory of this exact moment is extremely vivid as well. I dare say I can recall it as well or better than moments in my life that are arguably far more important or impactful.

Skyrim was my intro to the Elder Scrolls universe. Without it I would have never gotten to ESO. I used to really enjoy ESO in the beginning. Now the longer I play it, the more I appreciate what Skyrim gave me, that ESO could never do. True progression.
