What? This is a horrible analogy.
Caviar is expensive because most wild sturgeon are endangered and thus sturgeon must be farm-raised for the roe. Additionally, a lot of the higher quality come from rarer sturgeon species which take years to produce roe compared to some of the "lesser" qualities that produce at a faster rate. That's not even taking into account the milking/harvesting and packing processes.
However, all crown items (crates, gems, straight purchase) all are only artificially scarce at ZOS's whim. Once the assets are produced, they're there (and indeed some/most 'new' content utilizes existing assets in some way). There is no bottleneck at the supply source, no cost of materials or labor beyond additional production, etc.
While ZOS can choose (whether I agree with it or not) at what price, currency, and window in which to offer items, let's not pretend crown items are something they're not.
Caviar costs what it does due its extreme rarity, difficulty to farm and the fact it takes years to cultivate. There's a legitimate reason why it costs so much - it's a finite resource. Kind of a bad comparison when putting it up against something digital which can be indefinitely generated after its been made.
