Depends on what you're aiming for. There's probably a lore resource somewhere that gives some of that information.

If you want to know how to find out in-game, though, you can do the same thing I did to figure out the height of my max-slider orcs. It'll involve using the 3 meter targeting circle of Fire Rune (or its morphs) and a long rope (I use the orcish well bucket furnishing) or other long object with a repeating pattern, and some screenshots to determine how many instances of that pattern equals 3 meters.

Max-height orcs, by the way, are apparently 8'3" in-game according to my rope measurements using Fire Rune as a standard (with ~1% margin of error due to pixel/texture sizes). I have a feeling that's taller than intended by the lore, but I'm okay with it. It kinda creates a sense of everything being gigantic in the game compared to Earth, though.

Obviously there are always exceptions or variations.

Khajiit as a whole can be up to 9ft easy. It is only the playable version that jas smaller height
