A fresh start server? A WoW Classic Approach? Would you want it?
As much as I love ESO, I definitely don't want to go back to Day 1. It took WoW 10+ years of content, before they even considered Classic servers. I just want ZOS to continue to perfect the system they have already.
Flat no. Despite the fact winding back a few years would make Sorc great again. The game is in a better place now than launch (console)
I'm curious OP, if you were here since launch why have you only started with the daily threads recently? What was the tipping point to hit forum grind end game?

Can't tell you how many times I've wanted to delete my account and start from scratch, I've missed falling through the floor and randomly being kicked from the server etc etc.
I agree with op, this game should be more like other failing mmo's cos who'd want to go forward when going backward is an option?

The difference with the other games mentioned by the OP is that they were by common consent better at the beginning than they are now, hence the desire to be able to play them as they were then. ESO, on the other hand, is by common consent a better game now than it was at launch, so why would most people want to go back to how it was then? I certainly wouldn't, although I happen to think it was fine back then - I just wouldn't see the point in it.
Back to Elder Staves Online, where stamina-based characters were not really an option? Where almost nothing was interactable unless it was part of a quest? Where you were railroaded through the zones?
No, I think I'll pass.

Played WoW Vanilla and early XP's (BC, Wrath, Cat). played a bit at legion. Also Played on multiple private servers throughout the years.
Played ESO since inception, took a break and came back when Vr disappeared. So I have pretty decent Experience with both.
The early game in both was vastly different. WoW had an appeal to it in the early game, and Vanilla, BC, and Wrath all had a very solid and unique feel to them that attracted players. Many players regretted the path of evolution that Blizzard took with the game after Wrath, Which is why private Vanilla/Classic Servers had such a huge following.
ESO was vastly different. it had a very rocky start, with little to no end game, a difficulty wall that alienated a huge portion of the populace...ESO had to undergo major changes early in it's life just to survive...it was bleeding players like crazy and would have imploded if it hadn't changed in very big ways. Not that I necessarily agree and or think the current version is the best, but the early iteration was a design that turned off a great deal of people.
WoW = early attraction and lots of players wanting to play that early design.
ESO = Bad early design, and few players want to play that design.
Simple as that. ESO is a better game now then launch, Which many people would NOT say about WoW. Now, I know that there are players that liked the early iteration of ESO (the whole VR debacle). But the majority of the player base DID NOT. I was in the arguments on the forums back in those days, and I saw the writing on the wall as did many others. There simply isn't enough support for classic servers, and for good reason.
Blizzard didn't even consider a Classic server a realistic possibility until the Nostalrius team showed Blizzard a petition with a huge amount of signatures, and literally went to Blizzards HQ and gave a presentation on the whole thing (with more the 250 thousand supporters behind them). Even with this, It took Blizzard close to a year after that to even announce that Classic servers would be a reality. WoW is a freak of nature when it comes to MMO's. they were huge, still are one of the biggest, and they have a huge amount of resources to put into this kind of thing.
ESO would need allot more people then what they would get, and allot more free resources to even think about this kind of thing. Unfortunately, people look at what WoW is doing and think it's something simple, when it's a huge undertaking. ESO simply does not have enough supporters in the player base and enough resources to approach this.
