I bought the collector's edition upgrade today and i'm just wondering when I get my stuff? I've gotten the senche, do I get the other stuff, the other mount, at release?

Yes, at release.

They seem to be holding back on releasing the other stuff maybe those assets are not added to the game yet.

You get the rest at release yes, only the mount is given right away.

Try restarting your computer. Lots of people have been getting that UI error me included. But everyone has fixed it by either relogging or restarting. Fingers crossed for you!
