So, in your experience, which helm set is best for an undead kitty stamblade? I was leaning towards Velidreth

I like Velidreth on my DW Stamblade. It procs a lot ...
Stormfist is very underrated, I run it quite often in medium divines, as a khajit stamblade. It has a rep for being slow to fully proc, but I've run it enough to realize if it’s missing your primary target(s), they are probably getting missed by your regular AoEs anyway.
If single target, go Selene's because it can proc more often (4 second cool down, 15% chance, 12K damage): however, requires direct melee damage to proc, though won't be much of a problem on Stamblades as they usually spam Surprise Attack, which fits the requirement.
If moving a lot against bosses with a few adds, go Velidreth because it can hit 3 enemies with the same proc dealing a lot of damage. (9 second cooldown, 20% chance, 10K damage x 3 = 30K damage per 9 seconds if there are 3+ enemies)
If you are against lots of trash mobs use Stormfist because it can deal high AoE damage to an unlimited amount of targets in the area. (8 second cooldown, 10% chance, 5K AoE DoT over 3 seconds + a final 9K AoE damage at the end, slow but crushingly powerful) The main problem with Stormfist is it does low DoT for a full 3 seconds before finally dealing the high damage part of the proc, allowing a lot of enemies to run out during the slow DoT.
If you are soloing or PUGing and can't hit max penetration use Kra'gh for the penetration bonus. Its proc, IMO, isn't as good as some of the others mentioned. (proc is 3 second cooldown, 10% chance, only 3.8K cone damage over 1.2 seconds, however 1 piece adds 1.4K Penetration)
So, there isn't really the "best", just depends on the situation

Here are some runner-ups that I have heard mentioned:
Sellistrix recently got buffed to become viable in the Clockwork City patch. Used to deal roughly same as Kra'ghs, with only 3.8K damage after 1.2 seconds, however Sellistrix only procced every 5.5 seconds (with same chance, 10% when you deal damage), however Sellistrix had bigger AoE + stun, but did not have the penetration that made Kra'gh good.
In the Clockwork City patch, Sellistrix was buffed to roughly 5K damage, so now deals pretty good damage. However, since the stun isn't really needed in PvE, for larger AoE Stormfist is usually preffered.
Domihaus probably has the most flexible proc with 10K damage over 10 seconds as a large scale AoE along with a +200 Weapon Damage for the duration, for a 15 second cooldown & 15% chance. However, it can proc either Physical (which suits us) or Flame (which doesn't suit us) damage, and the RNG, 50/50, is too great. Also, if it procs Flame, you get +Spell Damage instead of Weapon. TOO MUCH RNG
Engine Guardian was a favorite for sustain, with a 15% chance to proc a regen of 15K Stamina over 6 seconds with no cooldown. and this is whenever you use ANY ability. However, the RNG is even greater than the last one, having a chance of proccing to heal 15K health or regen 15K Magicka instead of the needed Stamina.
However, since it has no cooldown, I guess you can keep refreshing the type of regen until you get to the right one. Still, 1/3 chance is too low for my liking.
Bloodspawn can generate a lot of Ultimate but requires you getting hit, which is usually the tank's job (to get hit.) So, won't happen often.
Scourge Harvester can deal 6K damage AND heal 6K health on proc every 6 seconds, however, like the above, requires getting hit, and usually it's only your tank getting hit. So, hard to proc.
Slimecraw gives passive Minor Berserk at all times, increasing damage by 8% at all times. However, Stamblade Grim Focus + morphs already gives the same buff, which can't stack.
Spawn of Mephala deals 11K damage over 10 seconds in a small AoE along with applying a snare, slowing down enemies, and has no proc chance: It is guaranteed as long as you use a Heavy Attack. However, Stamblades don't use Heavy Attacks a lot, as they get their sustain from light attacks while using Leeching Strikes, so this won't be that useful.
Troll King is purely for trolling others in PvP, because whenever you heal yourself under 60% health you get a ton of Heal Regen that literally keeps you healed forever. However, in PvE your focus is to dump out as much damage as possible, so it is kind of useless as your healer would be doing the healing for you.
Molag Kena sacrifices sustain for damage (+500 weapon/spell damage but abilities cost 20% more), in PvP the burst is nice but in PvE, boss fights usually take a long time so the 20% loss of sustain is painful.
