One - minotaurs are a race, not a class.Minotaur class
Two - they are a larger then usual race, so would clip through balf the doorways and some other places. And as such, about as unsuitable as player characters as giants and ogres.
Three - this is the second era, not the first era. Minotaurs in these days are generally considered too barbaric and dangerous to be tolerated by the other races (thanks in no small part thanks to the alessian order, as has been mentioned)
All said... the best people in ESO could possibly hope for was a merely man-sized minotaur polymorph. And until that becomes reality, go for a certain crafting style for especially, uhm, bull-headed characters...7 -

...Well they are a race within the Elder Scrolls universe and it may not be soon (insert meme of Gina). But we have:
4 Mer races. Altmer, Bosmer, Dunmer, Orsimer
4 Men races, Nord, Regaurd, Imperial. Breton
2 Beastfolk, Khajiit, Argonians
...So yeah if a new race was going to be added, my vote would be a new Beastolk one....so why not Minotaur.

Minotaur race, to me sounds like, Stamina only. If that's the case and if and when; we do get new race. Good chance we will get another race, to balance the game. Especially if Minotaur to me, sounds like Stamina race. In which case, what Race; would be good for Necromancer Class?
Hence we need another race; that does Magicka. Especially to balance out the game, to make the game more fair for everyone. But just expect, nerfs for everyone. My gut tells me new class will, come to play. Unsure about new Race(s) (notice the extra "S") Everything is possible, in the land of Tamerial.
