I have been carried through this (and others), and to those that did the carrying - a BIG thank you. It's the only way for people like me to learn the mechanics. I've only recently been able to pay attention to the chat screen as everything was a blur, including racing through sections on mounts, and generally just struggling to keep up.
On the DPS, what % should I be doing? I am generally around 30-40%, sometimes low 20's, today 60%. I have seen the skeleton tests, but this seems to me to be so far from PUG reality, I'm keen to know where I should sit to know where I need to improve.

You always have to pay attention to your chat screen during the run. Or else you risk frustrating your group.
As for your dps, it is less about the % of the group, and more about the number. Reason being the other dps could just be totally incapable so the percentage would be skewed. 20k+ is generally considered acceptable for group dungeons, but the more the better. If you can pull at least 20k on the skelly you'll be fine.

Yes, I'm sure I frustrated more than a few initially.
On the DPS, won't the nature of the fight vary the DPS? e.g. single target vs adds due to aoe?

Absolutely. And not only that, time spent trying to avoid damage is also a factor and will negatively impact dps. That is why I gave a figure based off skeleton parse rather than boss fights. Fights vary, there are ads, there is damage to be dodged, resing and other factors that negatively impact dps. That's why if your rotation is proven effective to a certain extent on the skelly, you'll know you can bring it into a dungeon run with no issues.

OK, that makes sense, thanks. Now to find a skeleton...
