It all depends on the build.
I have a stam DK tank that does no dmg but is close to unkillable
I also have a magicka DK tank that has ok survivability, but can deal 20k DPS single target.
DKs are the best tanks, bar none, but your build should match the content you aim to play. I would never bring my Magicka tank to a trial...but vet dungeons melt pretty fast with him.

1. If magicka tank, go magicka. If stamina tank, go stamina. Duh. If super duper pro on resource management while keeping all in group buffed and debuffs/taunt on boss(adds), go put points into health, hor larger shields on group.
2. DK is best tank in game. Period.
3. PvE tanks should tank. Leave the bloodworks to PvP tanks. (IMHO)

2. They are considered the meta thanks, but any class can yank. The big thing they have going for them is a high survivability, high ultimate generation, and abilities that help other roles.
3. You can survive a long time and do damage with certain builds the big thing is learning the fights though, so you know when to block, step out of the red, etc.
