In the most extreme min/maxing cases, the holy trinity is 100% present in this game. If you want to do bleeding edge maximum DPS, you will give up all self healing and tanking abilities and the same goes for healing/tanking for the most part.
However, this game plays more like GW2 when you've got a balanced build for PVP or solo/group PVE. A tank or DPS can run solid healing/self healing abilities, and a healer can run plenty of DPS abilities.

Dragonknights are OP Tanks
Templars are OP Healers
And if I remember right
Sorcerercs are OP Magicka DPS
and Dragonknights/Nightblades are OP Stamina DPS
Not sure about the current Meta on DPS but the Tank and Healer has been ironclad since day one.

In trials and harder veteran dungeons its 100% trinity just like you said. Also i dont think gw2 is a good comparison. They forced you to have heals and support abilities.
