I am not liking those new health bars for mobs. Is it possible to turn that off in the UI settings or something? It just looks terrible in my opinion. Ruins the whole immersion for me.

Yes, you can turn them off. For some reason the new health bars were turned on by default unlike all the other new UI features added that have been off by default. Look in the Nameplates settings tab and set "Healthbars" to off.
