1. I am in shors stone by her tent but she is nowhere to be found. How do I get this quest started?
2. Is there any way to discovewr exdactly which quests I have completed - the journal only says (for example) completed 59 queswts out of 63 in Rift. But which ones?

2. No, other than by comparing your memory to the lists of quests for each zone some websites offer. (edit: Apparently someone made an add-on but I don't know how accurate it is).

✭If you're on PC, look up the addon "discovered". It'll have incomplete and complete quests as map markers for you to mess around with. It's not 100% perfect, but it's pretty close from what I've seen.
If you're on console though, best bet is to compare quest lists off-site and hope you remember the names of the quests or generally what they were about.0
