I have a Nord DK just started new so only lvl 7.
I understand I'm going to be a tank but my question is for endgame situations am I able to do any decent dps I would like to do pvp in vet ranks but always hear of frustration with not being able to get kills. Tanking fits my play style but I would hate to be handicapped in pvp.

You'll have no issue being both tanky and getting kills in PvP as a DK. Especially since the new patch lets you devote less to mitigation and more to damage.

I'm actually trying to do the same with my nord dk with endgame in mind. I'm vr5 and tanking isn't really a problem for me its the balancing act of gaining DPS without loosing too much defense. I recommend using sword and board for tanking and two handed for DPS. Stamina is obviously important to both. But maybe a hist bark/hundings rage armor set combo? What do u think?

You can mix and match. Hist bark for sure. You could throw in medium hundings or even ravager. As long as you have around 20k+ physical and spell resist, you'll do fine.
