You're going into battle, not a jousting tournament. I dunno, have you ever spent much time riding horses IRL? Especially in armour? It's not as if you magically fly on and off of their backs. For folks in Heavy there should be a squire that runs up and spends 10 minutes trying to hoist you onto the thing.
I just make my Alts early. Then I can level up their mount stats long before I even play them.

If you don't like the idea of training classes, consider it acclimation classes, so the equally noble and strong willed horse doesn't dump you in the middle of a mob and trot away.
EDIT: The horse doesn't care that you saved the world.
