Templars:
Templars are the warrior caste of a Temple. They are typically taken as volunteers from the general followers of any temple. Often they are orphan children who are brought in and raised by the church as Templars, and often they are simply followers of a God or Goddess who have decided to become a holy warrior and dedicate themselves to fighting for their deity.

Paladins:
Paladins are typically chosen from among the ranks of the Templars, although in some special cases they can be brought in by the choosing of a deity or the designation of a prophecy. Paladins are the uncontrolled holy knights of a temple. They are considered revered holy figures who have achieved the high status of being able to battle for their deity without the express consent of the priests or priestesses who control the temple.

    Paladin
    Templar is from the Knights of the Temple of Solomon in Jerusalem (which was in fact really the al-Aqsa Mosque). They were named such because that is where they were given their first quarters/barracks by the king of Jerusalem (i.e. they lived in the Temple). They did not generally accept children; most of their fighting members were adult knights who had decided to live a more holy life.

    Paladin comes from Palatine, one of the hills of Rome, where the Roman emperors had a palace (related word there too). Gradually, the word came to be associated with high officials, and in the Middle Ages with high feudal officers who had a greater degree of autonomy than other vassals. Only more recently did the word come to mean what most MMOers think it means: a holy warrior with spells.
