Elder Scrolls from Arena through to ESO has always had a large variety of color in armor and robes much more so that other games. Just because it's not cartoony people see only grey.

I was looking through nexus mods to find improvements to the faces and bodies of oblivion's models, (I find the faces to puffy.) Some of the stuff on there... it's not like you can have actual sex with these animated graphics or even simulate it in the game (unless there's a mods for that but please don't tell me if there is.)

But the point is 'color' there is plenty all around Tamriel. Check out glass armor for a start.

In morrowind my gear is all glass (every piece stolen from a chest or store shelf tyvm) except wraithguard and the savior's hide.
I actually, adjusting for graphical upgrades, prefer morrowind glass to what they have been proposing for upcoming glass motifs. The spiky parts of the morrowind glass and the elaborate helm are awesome.

Those colours (including Neon/Electric/Dayglow style hues) were quite common during Europe's Dark Age, clothes were frequently brightly coloured (ridiculously so), and Armour enamels could and were frequently coloured similarly.

Well have you seen any characters in former Elder Scrolls games wearing bright pink, or neon colors what so ever? The only one who comes close as far as I know is Sheogorath. I'd hate seeing it for the same reason I'd hate seeing soldiers of Minas Tirith, or Stark bannermen, suddenly dressed in neon pink. It doesn't fit medieval settings, dyes like that weren't available at all in actual medieval times (except perhaps for royalty and aristocracy), and it looks ridiculous.

When I think about glass armor I always think back to Morrowind too for some reason. I have not played the game since I was rid of my xbox, and that seems like a long time ago now.

Combat level in Skyrim was about the only thing against it. But none of them were exactly hard.
Morrowind was great, but also one of the most frustrating things I have ever done, and I'm not talking challenging frustrating I'm talking walking around until blind luck comes into play.
Morrowind had a better mood though and to be fair I probably put more hours into it than all the rest put together.

Hehe, Robin Hood is a myth. No facts have ever been revealed to state he actually existed....and definitely his 'merry men' never did.
It was kill or be killed in those days and not much 'merriment' atall what with starvation, poverty, the Black death ect.
