Is it just me that feels I'm Beta Testing Console Release and Paying to do so?

You're exaggerating "it's all opinions" to defend the beta version of a game released as finished.

The amount of changes to DKs alone in the first 3 months shows they haven't even began to flush out the class. Meaning they're working on covering the grid still.. i.e. lighting

EVE went through a major ship rebalancing iteration starting about 2 years ago, and continuing to this day. It was, at the time of the start of this, 9 years old. Obviously, EVE was still in beta after 9 years!

Did they do major changes just after launch 11 years ago? Did they release 4 major content updates in the first 6 months to fill the gaps in the game because it was unfinished? No? So game was functional at start (besides of bugs & all that usual stuff) and they decided 9 years later after prolly giving a very long thought to modify a game that had had years to develop and evolve?

Name one successfull MMO that went live and was so buged unbalanced and incomplete that they had to push Major content updates for the 8 months following release to complete their work. Then, you keep the golden cookie.

I'm not certain, but I'd bet all of them have released major content within 8 months. Anyway, the major changes are due to the fact that a lot of people don't want to play the same character through all three factions and a lot of people don't like the veteran system so they are slowly changing it. I'd say that's pretty nice of them to listen it's player base after doing all that work.
As far as bugs go, I've seen a few graphic glitches, and maybe 4 quest bugs and I've played through 2 factions so far to level 50.
