My favorites are the book about the battle from the beta, the Harry Potter reference, and the fact that two of the default horse names are Sweetroll and Fishystick.
If you place your cursor on your character on the login screen and spin it really fast it'll do a dizzy dance, or a face-palm action. Perhaps there's others I only saw those two.

On the subject, my favorite was actually "Maiq' the First". He explained his family history to us in beta.
I was the first in Beta to find him. You should have seen the forums light up when I told people he was in the game.
After a few weeks, they changed his name back to Maiq' the Liar.
I'm not sure why.

I found an interesting unintentional easter egg I won't go too deep into it because I don't want to chance getting myself in trouble, but suffice it to say I have spotty internet sometimes and ESO doesn't always close when my internet connection drops.
Basically nothing triggers, including the fish that eat you for swimming too far. While I'm waiting for my connection to come back, I sometime just run around jumping from high cliffs and what not since damage doesn't trigger. Sometimes I got out of bounds and throw myself off the edge of the map.
One of the times on a map I'll leave undisclosed I found some map textures where the grass should have been along with some partially built buildings. Looks like stuff they started developing but put on hold... hence why I'm concerned at discussing the details of it without getting myself in trouble.
It really was some of the coolest stuff I've seen though.
If a mod like @ZOS_GinaBruno says I can go into it I have screen caps and everything. But cool as it is, I'm not getting myself into trouble for it

Several months ago, my internet connection dropped all the time while playing ESO. I could run around and nothing happened, too, except for the times my character was dead already when the connection was back since it tended to disconnect in combat or at least near enemies (not always, though).
But, I wish I would have had the idea to check out the "behind the boundaries areas", too, this is awesome^^
And I really hope you won't get any trouble since it would be ridiculous. It was definitely the game which slowed down the connection (if it was not gone completely), so they better allow us to snoop around in return

I remember a previous thread where someone used a desynching to swim over to Balfiera Isle in the middle of Iliac Bay to look at the Adamantine Tower

I haven't been to that one, but since mods haven't stepped in to say yay or ney and apparently this has been in threads before.
I found Skingrad (from Oblivion). At first I thought I was about to have a creepypasta moment. I ran across what looked like some letters(large and on the ground). Then going a bit further there was a tombstone with RIP as a part of the ground texture. I thought maybe it was a hidden dedication to someone who might have passed during development or something.
After getting to a higher location I could tell it was the ground graphics replaced with a map. I've not seen this particular map image before but it looks like something from Arena/Daggerfall days.
I used a few of the discernable letters to find what it was a map of, and it happened it was a map of the area. Seeing a large wall I decided to go explore it.. It was a city o.O incomplete but it had buildings within the walls. There was even a fountain. No reason for it to be there, you can't even see it from normal areas. Then on the ground I saw letters and pieced it together as Skingrad There was some ruins and such to the west of it, I don't think it was intended to be Kvatch though, not sure what it was.
