NBs hit much much harder than you claim.. May I suggest finding a class mentor? A lot of good NBs can help. PM me for specific names of good pvp NBs.
Ambush is a class skill, so no matter what they do stamina builds, it won't have any affect on it. I've had ambush crits around 900, so it can hit really hard. If you are stamina-focused, the melee class abilities of the Nightblade are going to be pretty weak, and there aren't many 2h or dw abilities that hit hard. The only thing medium armor is providing them is physical crit values.
If you want to continue to be stamina-based, I would suggest that you use the bow primarily. Sneak heavy attack crit+Camouflaged Hunter crit+Reapers/Piercing Mark+weapon enchant crit = seriously dead vampries/werewolves...and that combo will hit non-vampires very hard too. I've also had Snipe's morphs hit me for upwards of 1200 hp. Alternatively, you can shift some enchants on your gear for magicka, so things like Ambush, Concealed Weapon and Impale hit a lot harder.

I will hit hard on non vr12s, but sneaking and ambush will result in 200 damage I can't determine what DMG the game allocates based on our attributes. When I die there are very rarely any NB skills listed as hitting me. Always sorcs and dks.
when will stamina builds be viable...
Defensive Stance is a spell reflect that stuns the caster, using their own spell. It's hilarious to use.
