Cambio is the entire reason to get the premium tome.

I generally prefer a more grounded Elder Scrolls experience, but talking animal merchants and names that are a bit on-the-nose both have a long history in the franchise, so...it's fine I suppose. His hat is cute.

I am no fan of Cambio. It basically makes Outlaw Refuges pointless. I like the refuges. I feel like a criminal when going there, dealing with other undesirables, underground in a cool location. Of course it is more convenient to just summon an NPC to do everything but that kills a lot of RPG flavor for me to do everything on the spot. We already don't need to go out in the world for many services anymore. Banker, Merchant, Deconstructing, Armory and now this. I like QoL too but I still want to live in an RPG world and don't just summon an NPC for everything.
I know I am in the minority with this opinion but hey.

He makes an allusion to the old joke "Why did the chicken cross the road," in his dialogue as well.

Never heard of it. It is from an American comedy show?

It's actually quite gruesome. It's a kid's joke now but the punchline, "to get to the other side" originally meant the chicken was unaliving itself.

I use Cambio to launder items instead of going to the Outlaw's Refuge, because I am a very lazy person.

My Master Thief is going for all the larcenist achievements, so she needs to fence as much as possible in the outlaw refuges. Whenever she steals something to launder, out comes Cambio. No point in filling up her inventory with lock picks and mats when she needs the slots for lucrative loot. He's also great when one of my non-Thieves Guild characters stumbles on a thieves trove.

@ZOS_Kevin is there a plan to roll this 'full fence' functionality out to the free assistant too or is this intended to be a paid perk?

I've read concerns about places in game becoming emptier if everyone can just do things in their own home or at any random place via assistant.

But I also think that a thievery assistant is nothing new; this one has only more functionality than the first one (and I actually think it would be great to add the fence function to the old one, too - though I don't believe that will happen).

It doesn't. It is just a sign of the times that the game is getting more and more watered down. Next step is the Banker being able to handle guild store business. So we literally have every service right where we stand. I am sure people would love that, too. Would I still be able to visit the Bank? Sure. Would I like that change? No.
Crafting Tables are so inconvenient. You have to move between them. Why not have a Crafting NPC I could summon where I can do ALL my crafting? Genius idea.
I am exaggerating of course but this looks like the way things could possibly be going.

I do not see the problem, even though I like you enjoy going to these places out in the world and interacting with the NPCs, especially when I am actively questing (in which case I also do not use wayshrines and travel only on foot or via navigators and such). Like you yourself said, the option to do this still exists and isn't going anywhere.

However, if one is not actually immersing themselves, either at the time or at all (because people have different playstyles) it is little but a chore and a waste of time to travel back and forth and perform a bunch of clicking, when the process could be simplified so one can go do the things they actually want to be doing in game. If I for example need to craft a bunch of gear for levelling a new character, things like the master crafting stations and the banker NPC save me a lot of time on something I do not enjoy doing and which is not something I consider an in-character activity.

People have different priorities and a lot of people do not have much time to waste on in-game chores. Optional quality of life updates are not a bad thing.

Edit to add: And yes, I think the master crafting NPC sounds like a good time-saver, too, even though you apparently think it is a ridiculous idea.

I'll admit that being able to pay bounties feels too easy. I've had good times trying to get to an Outlaw's Refuge without being caught. Now I just summon my trusty rooster.

But for stuff like fencing and laundering, I found it a pain to go to an Outlaw's Refuge because of how most of them are designed. You usually have to travel some ways inside, often through empty corridors, just to get to a fence. For me, wasting my time by running through refuges isn't fun or immersive. So I'm glad I don't have to do that anymore.

Oh without a doubt assistants like Cambio are bad for the game ESO used to be. It's not that long ago that had someone even proposed the idea of adding such an assistant like this to the game, I would, and actually have, argued most fervently against the very idea.

But then the past year or so happened. Power creep evolved into straight up power boosting by design as the power ceiling was blasted to bits. Character progression reduced to trivial levels as xp boosts handed out willy nilly, research and mount skilling requirements reduced to barely a third. Travel over water is no longer a concern. PvP obviously getting replaced with templated play requirements. Lead drop rates are to be getting relaxed very soon too.

As all that came to pass, I eventually came to grudginly accept that ESO is no longer the game it used to be, and it likely will never be again. I'm not thrilled about it, but it is what it is.

I wouldn't be entirely surprised if in the not so distant future new banker assistants with guild bank access came to be. Surveys being turned into lootable containers removing the need to go out and collect them. Etc..

After accepting this, I decided to embrace Cambio. Though I'm sure guild traders located in the outlaw refuges are none too happy about it.

Inconvenience shouldn't be a tent pole for game design. If the player experience can be improved to remove friction and tedium, it should.

It's not about inconvenience. It's about playing an RPG. Immersing yourself in a living and breathing world. To me this takes away RPG flavor. I know people like to min /max their experience and have everything at their fingertips all the time but this is not what I want for myself and not for the game as a whole.
If you want more convenience, you will probably get it. Maybe someday we won't have to leave town anymore or even move an inch because every burden has been taken from us...
    I am exaggerating again.
ZOS made the right move with Dynamic Encounters. Making the game world more interesting again. Of course it is the same event over and over again but we are out there in the world doing something. Not just standing in town doing everything in one place because we have several NPC's to summon, waiting for another queue to pop.
I hope they expand on open world gameplay.

I would not describe standing in one place for half an hour and waiting for the encounter to start as "doing something".
