Newbie player, looking for experienced theorycrafters/ DK, Templar stamina build PvP

Im looking for an EP race to go along, since i find that EP has a more immersive/evil theme and i would enjoy it more leveling, as to seeing trees, and grass everywhere.
Now for me, i tried a stam NB to lv 20. I love it, great and fun class, but as a new player i would like to expand my adventure and tryout other classes before i can decide for myself, what i want to stick with endgame.
What i look into for a class,
- DD - i love dealing damage
- Sustain/Survivability - i would like to be upfront and engaging. but not having downtime cuz "oh ***, dont have enough stam to finish this guy off" / " damn my pots on cd, could of survive and killed that guy "
- What weapon sets should i be leveling as a dk/templar?
also is it true that stam dk is just spamming wb? or is it more to that?
and what race should i go as, for a "little bit" of min/max? ( was thinking dark elf for stam dk, and imperial for templar but again, no idea how these guys are in endgame )

be using Two-handed in PVE, as DW/Bow tends to synergize best with and
maximize dps for the class. PVE Stam DK is all about layering high-powered DOTs with AOE
from weapon skill lines.
Most important DPS PVE class skills:
Noxious Breath
Venomous Claw
Flames of Oblivion
Obisdian Shield
Others that you will use occasionally:
Dragonfire Scales
Take Flight
Molten Armaments

Khajiit is absolute best for stamina DPS, thanks to the extra critical chance.
Redguards and Imperials are second in terms of DPS (maximum stamina), but Redguards are #1 in stamina sustain.
Dunmers get a "decent" award.
Rest is meh.PC EU - Zahraji of the Void, aka "Kitty", the fluffiest salmon genocider in town.

✭Orc is also good, max health max stamina, increased mobility which is good as a DK and a bonus to weapon damage.0
