I don't know about you, but I think I'd rather wait for the boss to stop being damage immune than face one or more of these things in a fight.
I'd be happier with any of those more than invulnerability phases. Especially those than penalise high DPS, like the boss with the Laser beams in Frostvault which can give back to back invulnerable phases with no chance to hit him in between.
Choosing between focussing the boss or clearing more adds is a much better option

That works when you are with a coordinated group who recognizes that there is a kill chain that must be obeyed if you want to pass the boss, but if you get someone who is obstinately going to treat the boss like a parse dummy, that makes the encounter miserable for the others in the group.
I want to be clear that I'm not a proponent of health gating mechanics. I absolutely hate them too. But in all fairness, there isn't really many boss mechanics people will say they love because I think people love using their characters how they were built to be used, which is often to maximize DPS against a parse dummy. Asking people what mechanics they like is kinda like asking a PVP player what they like to get killed by. Well nobody likes to get killed in PVP, and nobody really likes mechanically difficult fights, but having varied encounters with different mechanics is what makes the game interesting. If you don't like a certain encounter, you just avoid it.
