Biting jabs, reflective light, impulse, blazing shield, breath of life, binding javelin. Any combination of these skills and you can pretty much faceroll most solo content as a templar.
I would caution you if you're considering a hybrid build, as speccing/glyphing for both magicka and stamina (to support destro/bow) will just end up gimping your total damage output. Better to focus on one. There are viable alternatives to most of the skills listen above in the bow line, such as the AOE/dots offered by scorched earth and acid spray. It's all a matter of what you prefer. Breath of life should always be on your bar, however.
I'm Breton, so I'd like to stick with light armor. Debating if I should go Destruction/Bow. Do they compliment each other well? I love having AE spells like impulse.

Bow shouldn't compliment Destro staff much, they are both ranged weapons, they are different approaches to the same style.
Pick either a bow or destro staff and use a melee weapon for your other skill bar.
One hand and shield gives best defense, but limited offense.
Dual wield is the other way around.
Two handed I haven't tried, but there are people who swear by their two handed Templar.
