Saltrice - (Salt tolerant rice) Saltrice, pronounced just like it looks is, in fact, a kind of rice that can grow in paddies of either fresh or brackish water.
Because it doesn't grow on plants, so not consistent with the other sources of cloth material. But all gathering and material naming is pretty abstract.
Not totally true as their already HIDES from wolves and deers... And If I lived in Northern Skyrim I would want WOOL and heavy HIDES. Who knows maybe they saving WOOL for above level 40 clothing...

On a more serious note, it's because crafting materials have to be gained from nodes (medium armor aside, which suffers a lot of issues with material gathering). All of the other crafting materials for light armor are gathered through plant nodes on the ground. So, unless we go tying up sheep to poles and sticking them in the ground so they can glow yellow when you get in range to pick their wool, it's not gonna happen.

Yes, but all those Hides are for Medium Armour, Wool would be Light Armour (clothing really), which has plant materials as it's basis.
Besides do you really want them incorporating Sheep/Goats as enemies for us to kill for wool.
