Provisioning and your obvious distaste for tomatoats... lol I hear ya!
I have been religiously learning traits from early access, my mules know 99% of the stuff I still need to learn on my main to avoid having to ask when the timer is up, they just make it and throw it in the bank.
They do appear to have nerfed the crap out of higher end epic recipes, but motifs drop at a decent enough rate for the lower 9, and have started to flood the market at 11 through 14. Prices rarely over 35k for Deadric and even those can be negotiated down or trades work. Imperial 10 is still not being advertised too much.
A level 35 Purple food recipe went for 25k gold last night in zone. Granted it's not the VR5 one, but still nice to know that THEY exist.
I like all the professions as is and if drops from crag are cooler looking, so be it. No game I have ever played has had this much variety for a single character when it comes to making your own stuff. For example, you can easily support yourself in game by making and vendoring food, drink, armor and weapons with just junky matts you find laying around or farm matts in the wilds.
Cleaned out food and drink mules a couple days ago and with 3/3 in both to make extras, cleared over 30k gold just from using up most of my level 1 - 45 matts. Granted a "create ###" option would be nice, my poor R key, it only took a couple hours and I watched a movie while I did it.
Cleaned out my smithing mule, same thing. You can always give the stuff to a friend to make and sell then give you the gold if it helps them level their professions. Its not a lot of Inspiration, but it helps.
And any way you look at it, if you are not an uber VR12 end game raid raid raid must get best time raid raid junkie... then crafted gear sets are just fine for playing the game.

Unless "almost" to you means around halfway?
6 + 12 + 24 + 48 + 96 + 192 + 384 + 768 = 1530 (minus 20% for 3/3 perk) = 1224 hours total for 1 armor type - all 8 traits. Thats almost 52 per piece… 7 pieces is roughly 360 days (divided by 3 at a time for 3/3 perk) is 120 days to do all 7 armor types if it goes perfectly.
Besides that, sounds like you should take some time off… post is kinda snarky as I am sure it was intended to be.
