Build Suggestions for Vestige Difficulty for new character

I've wanted to write an epic poem themed on Elder Scrolls Online for a while, but the overland difficulty made it super hard to find inspiration. Now that I've had a chance to play with it for a while, I'm thinking I like the idea of starting a new character and taking them through the whole main quest on Vestige Difficulty the whole time to find my inspiration.
I'm open to just figuring it out as a go, but I also realize that there is a massive well of community knowledge to pull from.
For a bit about me, I'm not a new player. I'm CP 2500 ish. I've soloed most every group dungeon on normal (obviously there are a few that you just can't), I've ran solo through every arena on normal, though Black Rose Prison is brutal and I die a lot. Most of this was with a heavy attack focused one bar Sorcerer. I prefer the laid-back playstyle of that build, though I do realize that one of the things I'm going to have to focus on is Crowd control and blocking for a pure Vestige difficulty character.
I've also got every single subclass skill line maxed to level 50.
I'm fine with a pure class or subclass build. I've got no preferences on that. For the build I will choose the race based on what fits the character and not what fits the build.
So, with that in mind, what recommend for a build?

    It's quite early on with the new difficulty to recommend a build tbh,

    Personally on my account that has the least content completed(Epic Account) I am intending to run my main there on Vestige difficulty through the whole game.

    My main there s a Templar, although a lot of people have a lot of issues with jabs, as a totally committed magicka based player, it still produces piles, huge piles of dead bodies when used well!

    I sleep until midday cos I'm a problem solver!

    Templar Sorcerer, Puncturing Sweep with Critical Surge. That would be an incredible amount of self-healing. Don't know if that is what I'm going with, but it's food for thought.

    from what ive played, in order to really play through on vestige difficulty, you will basically almost have to build up as a full tank and rely on a companion for majority of your dps

    taking 600% more dmg means that even trash mobs could hit you for like 15k-20k on light attacks, so unless you have high mitigation, capped resistances, and around 40k hp, those mobs will basically be 1 shotting you

    if your only doing story quests you might be able to get away with a companion tank for some of it while your on a dps, but survivability will still be an issue

    healing is not necessarily the issue on vestige, its how to avoid being 1 shot lol

    i have my main house (grand topal hideaway) listed in the housing tours, it has multiple target dummies, scribing altar, and grandmaster stations (fully filled out with current game), as well as almost every antiquity furnishing on display to preview them

    in progress: acquiring mundus stones (currently only have the thief)
