Anyone know of a quest tracking addon that displays more than just one of your active quests, like the map?

this one has been really helpful. Was suggested to me on another thread and has been extremely useful for finding hubs and quest givers. It isn't exact but shows all incomplete hubs.

Also HoW-Quest Journal is must have before you start Shadowfen. You may be able to get it to show previously completed quests if you had esohead running while doing them and you follow a certain procedure explained in the addon page.
