In the files, saddles are separate from the actual mount model, just like the upgrades you can get and turn on and off at anytime, so they could definitely add an option to hide the saddle too.

^^ Yes, please!! I'd be a lot more interested in mounts if we could see them in their natural (or magical, rather) beauty.
Yes, it should be super easy for them to do that, by the way, even the armor on mounts are also part of the saddle model, so they'd also be removable. In the files, saddles are separate from the actual mount model, just like the upgrades you can get and turn on and off at anytime, so they could definitely add an option to hide the saddle too.
That's surprising, even in the promotional art mounts always have a saddle, so I assumed they'd be part of the base model. It's good news they're not though, because that means it could be possible for ZOS to give us the option to remove it.
I'd like to be able to do that, at least for mounts in homes. Even if you have them as mounts in a stable or paddock (as opposed to using them like wild creatures roaming around) it looks ood that they've still got saddles and tack on, because in real life you wouldn't leave their tack on once you got back home.
