I've heard many times that the single-panel game is weaker. Is this true?
I know an Arcanist, he has a two-panel version. He did 155k damage on the doll. And he keeps telling me that a two-panel is better.
but I don't want to strain myself too much xxahah

I assume you are referring to one bar builds vs two bar.

Generally speaking, two bar builds are going to yield higher damage and better group synergy (if built for it).
One bar builds GENERALLY use the Oakensoul mythic, which is great for solo players or one bar players. It give sa bunch of defensive and regen buffs on top of DPS buffs.

If switching bars is not fun, or you have bad latency or hurting hands/fingers, then one bar builds can be a lifesaver.

Two are better for most but 1 bar would be better for you because they aren't so far behind that it's worth the extra strain for someone concerned about it. They can do the vast majority of content with ease.

Yes, two is better. More damage, more slots available for skills (more flexibility with skill choice), more slots for gear sets, can use a non oakensoul mythic, etc.

2 The panel is convenient more damage and you'll become a pro. And with 1 panel, they won't take you anywhere.
