IE, if I am a sorceror, and decide to take a warden subclass, but then realize, hey, I don't like this subclass, can I remove the warden subclass and choose a different one?

Apparently, yes you can. Skill respec will allow you to change.

There will be a set meta combination, you're right, and it'll probably quite literally be one.
Before hybridization there was at least 2 metas for each class, one for stam and one for mag. Post hybridization there's at least one for every class. Now, probably just one meta period.
You don't have to run meta that's true, but lots of people like to have what's best for what they want to achieve. They will lose options. This may appeal to the questing/overland crowd, but the enemies there die in 2 skills anyway.
