I'm not sure. Lot of players like to be in towns with many others around them. Also, all those who like to have followers and don't turn them off in towns will keep going there.
I believe that players like me, really annoyed by followers in towns, are a minority. So to be able to have a mobile guild trader or a guild trader in their home could be a nice solution for them but I don't think it would impact towns population.
From what I see, although the possibility to have crafting stations at home or at guild hall, towns are still very populated at crafting stations. I think it would be the same for with guild trader.
All that to ask: I'm not long enough in the game to know, but was it ever an open point to create a merchant for the crown shop who would have the guild store option? Or is there maybe already one and I failed to see it?

So it seems that my only hope is that soon or later, ZOS increase the radius of effect of the hiding followers feature and that they extend it to bankers... Am not so optimistic!
I have my toon parked in Vulkhel, because there everything is together (really everything), including the hideout. Maybe it's time to give up on comfort and search for a less populated place, even if it means that I don't have all there.

Try Velyn Harbor. You need to do a quest to get the services unlocked, so a lot of people don't bother with it.

Edited for an add: Hmmm... Velyn isn't for me. It's quiet, yes, but has no daily writs givers and no crafters. It would mean to pick up the daily writs somewhere else and travel again elsewhere to craft (my home or another town)... Am too lazy for that!
But that's no worries. I will keep wandering a bit everywhere until I find a nice place. That's fun to do so.

And ZOS said they would never make something from the crown store better than the in-game version, so the trade-off for the portability of assistants is that you miss out on some other feature.

But there are Crown Store items that's better than the in-game versions...
- Crown Attribute Respecification Scrolls are better because they can be used from the inventory without having to go to a dedicated shrine and spend gold.
- Crown Skill Respecification Scrolls are better because they can be used from the inventory without having to go to a dedicated shrine and spend gold.
- Crown Riding Lesson Scrolls are better because they can be used from the inventory without having to go to a Stable and they have no cooldown, but the in-game Mount Training can only be done once per day and costs gold.
- Crown Mimic Stones are better because they can be used for crafting ANY style, but there is no in-game equivalent to them.
- Crown Research Scrolls are better because they reduce research times by 1/7/15 days and have no cooldown, but the in-game Research Scrolls only reduce research times by 1 day and have a 20 hour cooldown.
- Crown Repair Kits are better because it only takes using one to instantly repair ALL equipped gear, but in-game Repair Kits have to be used on each piece of gear and one at a time. Crown Repair Kits have always been usable at any level, but in-game Repair Kits used to have specific level requirements (this was finally changed to be used at any level).
- Crown Soul Gems have always been usable at any level, but the in-game Soul Gems also used to have specific level requirements (this was finally changed to be used at any level).
- Crown Foods, Drinks, Potions and Poisons are better (compared to the in-game versions) because they can be used at any level and scale based on level, but the in-game versions require specific levels for the same type of items.
- Crown XP Scrolls are better because they last longer and the in-game versions are expensive to craft. (Crown XP Scroll: 50% for 2 hours, Crown Gold Coast XP Scroll: 50% for 1 hour, Crown Major Gold Coast XP Scroll: 100% for 1 hour, Crown Grand Gold Coast XP Scroll: 150% for 1 hour) vs. (Psijic Ambrosia: 50% for 30 minutes, Aetherial Ambrosia: 100% for 30 minutes, Mythic Aetherial Ambrosia: 150% for 30 minutes). I've played ESO for 10 years and only ever found 1 Aetheric Cipher (required to make the recipe), 3 Aetherial Dust (required to combine with Psijic Ambrosia), and made a total of 12 Mythic Aetherial Ambrosia. But I've had a lot of Grand Gold Coast XP Scrolls from Crown Crates and Daily Rewards...
